Keto King Cake and Cheesecake

So as I'm sure you are aware I'm doing the Keto diet. Carly had a bad checkup this summer and we had to cut out most carbs. I didn't think it would be fair if I kept eating bread and Carly didn't :/

But I am not going to let that stand in my way of Mardi Gras Season!! It is King Cake time and I'm ready to eat all the fat!!

I used Carbquik, it's a replacement for most flour and makes stuff like Bisquik but without the carbs.
It works really well. But my sister tried it and she didn't really like the flavor or texture. But if you've been without bread for six months, it's pretty tasty.

This recipe has about 2 net carbs per serving.
I chose to stuff my king cake with cream cheese and Pyure. Braided it, then baked it. As you can see in the finished product, it puffed up a lot while baking.
The Pyure makes great sugar replacement. And if you pulverize it in a processor it looks like powdered sugar.

Grab this recipe HERE.

And for the Cheesecake, I was so involved in making it that I didn't take a lot of pics. Or any except for the finished product!!

This is make with a cinnamon cake crust and lots and lots of cream cheese. It's icing with a chantilly cream and is delicious. Clocks in at about 2 net carbs per slice.

And this recipe is HERE.

Happy Carnival Season y'all!
